Make this. seriously.

My mind was blown when I made this dish. It was so. so. so. so. so. so. so. so good.

Here's where you can find the recipe.

I substituted Turkey bacon for real bacon
Coconut oil for bacon fat (since Turkey bacon doesn't have much fat).
Onion for shallot.
And I cooked everything much longer than suggested, because we like our veggies soft.
I also cooked our eggs in a separate pan and let the bacon cook with the brussel sprouts.

  1. You might like this other dish that I've had here recently...here are the layers:

    venison sausage on the bottom
    sweet potatoes and onions for next layer
    scrambled eggs on top of that
    avocado as the top layer

    It sounds weird and kind of gross, but it all works together amazingly. And I think you could substitute the sausage for something else (ground beef, maybe?) if you don't like sausage.
